Ingredients

4 servings
Fish600 g cod fillet, in chunks
Salt1 tsp
Paprika1 tsp
White pepper¼ tsp
Dried mixed herbs (italian seasoning)1 tsp dried herbs
Maida (all-purpose flour, plain flour)1 cup
Cornflour (cornstarch)2 tbsp
Baking powder1 tsp
Egg1
Soda water (club soda)¾ cup + 2 tbsp, ice cold
Cooking oil (vegetable oil)for deep frying
Mayonnaise⅓ cup
Dill pickles (gherkins)finely chopped
Capers1 tbsp, chopped
Flat leaf parsleychopped
Lemonwedges

Method

5 steps
  1. 1Season the fish chunks with salt, paprika, white pepper and herbs.
  2. 2Whisk the flour, cornflour, baking powder, egg and ice cold sparkling water into a batter.
  3. 3Dip the fish in the batter and fry at 180°C in batches for 3 to 4 minutes.
  4. 4Mix the mayonnaise, pickles, capers and parsley for the sauce.
  5. 5Serve hot with the sauce and lemon.
Serve it like this

Pile into a paper cone or bowl with lemon wedges and the sauce in a small pot for dipping. Eat hot.
