Ingredients

Mutton (goat meat)1.2 kg on the bone, in large pieces
Salt1 tbsp
Black pepper1 tsp
Onion2, in wedges
Potato4, halved
Carrot3, in chunks
Cabbage¼ head, in wedges
Garlic1 head, cloves
Water1¼ cups

Method

  1. 1Season the mutton with salt and pepper.
  2. 2Traditionally, heat clean river stones in a fire until very hot. At home, use a heavy pot instead.
  3. 3Layer meat, stones (if using), onion and garlic in the pot, add water, seal and cook over medium heat 1 hour.
  4. 4Add potatoes and carrots, then cabbage on top, seal again and cook 30 minutes more.
  5. 5Serve meat and vegetables on a platter with the broth in cups.
