Ingredients

4 servings
Thick coconut milk½ cup
Egg2 for kaya, 4 for soft boiling
Sugar6 tbsp, 2 tbsp caramelised
Pandan leaves2 leaves, knotted
Salta pinch
White bread8 thin slices
Buttercold, in thin slabs
Soy sauce2 tsp
White peppera pinch

Method

5 steps
  1. 1Caramelise 2 tbsp sugar to amber, then whisk into the coconut milk with pandan off the heat.
  2. 2Whisk 2 eggs with the rest of the sugar and salt, strain in the coconut milk and cook in a double boiler, stirring, until thick.
  3. 3Soft boil 4 eggs: cover with just boiled water off the heat for 7 minutes.
  4. 4Toast bread until crisp, spread kaya and sandwich with cold butter slabs.
  5. 5Crack eggs into small bowls with soy and white pepper.
Serve it like this

Serve the toast sandwiches cut in triangles with two soft eggs in a saucer with soy and pepper, and a cup of kopi or teh.
