Ingredients

4 servings
Raw jackfruit (young green jackfruit)500 g tender jackfruit, cubed
Fresh grated coconut1 cup
Dried red chilli5 byadgi chillies
Urad dal (split black gram)1 tsp
Coriander seeds1 tsp
Tamarinda small piece
Jaggery1 tsp
Coconut oil1½ tbsp
Mustard seeds½ tsp
Curry leavesa sprig
Turmeric (ground turmeric)a pinch
Water⅔ cup
Saltto taste

Method

4 steps
  1. 1Oil your hands and knife and cut the jackfruit into small cubes, removing the tough skin.
  2. 2Pressure cook the cubes with turmeric, salt and water for 2 whistles.
  3. 3Roast urad dal, chillies and coriander in a drop of oil and grind coarsely with coconut and tamarind.
  4. 4Temper mustard and curry leaves in coconut oil, add jackfruit, masala and jaggery and toss on low heat until dry.
Serve it like this

Serve a scoop on a banana leaf beside rice, dalithoy and a fried papad.
