- 1Soak chillies and tamarind in a little hot water, then grind to a smooth paste.
- 2Heat oil, crackle mustard and curry leaves, add asafoetida and the onions. Fry until soft and pinkish.
- 3Add the chilli paste, turmeric and salt and fry until the oil separates.
- 4Add the potatoes, jaggery and a splash of water and toss until coated and slightly dry.
Serve it like thisServe warm in a bowl with dal rice, a spoon of ghee and a crisp papad.
