Ingredients

4 servings
Maida (all-purpose flour, plain flour)2 cups
Salt1¼ tsp, divided
Cooking oil (vegetable oil)1½ tbsp, divided
Water½ cup for the dough, 1 1/4 cups for the jhol
Chicken mince (ground chicken)300 g
Onion1 medium, finely chopped
Spring onion (green onion, scallion)1 stalk, sliced
Coriander leaves (cilantro)a handful, chopped
Ginger2.5 cm, grated
Garlic6 cloves, divided
Tomato4 medium
Sesame seeds3 tbsp
Dried red chilli3
Timur (sichuan peppercorns)½ tsp, crushed
Turmeric (ground turmeric)a pinch
Cumin powder (ground cumin)½ tsp

Method

7 steps
  1. 1Mix the maida, a pinch of salt and the oil. Add water a little at a time and knead 6 minutes into a firm, smooth dough. Cover and rest 30 minutes.
  2. 2Mix the chicken, onion, spring onion, half the coriander, ginger, half the garlic, 1/2 tsp salt and 2 tbsp water until sticky.
  3. 3Roll the dough into 28 thin circles of 8 cm. Place a spoon of filling in the centre and pleat the edge all round, twisting the top shut.
  4. 4Steam on an oiled steamer over boiling water for 12 minutes. Cut one open to check the chicken is cooked through with no pink.
  5. 5Dry roast the tomatoes in a pan until blistered, then roast the sesame and chillies until the sesame turns golden.
  6. 6Blend the tomatoes, sesame, chillies, remaining garlic, timur and remaining salt with the jhol water until smooth. Heat the remaining oil, add turmeric and cumin, pour in the jhol and simmer 5 minutes.
  7. 7Place the momos in bowls, ladle the hot jhol over and scatter the remaining coriander.
