Ingredients

6 servings
Beef1 kg chuck, in chunks
Maida (all-purpose flour, plain flour)3 tbsp
Cooking oil (vegetable oil)2 tbsp
Onion2, chopped
Carrot3, in chunks
Celery2 sticks
Garlic4 cloves
Tomato puree2 tbsp
Stout1 can, about 440 ml
Water1⅔ cups beef stock
Dried mixed herbs (italian seasoning)1 tsp thyme
Bay leaf (indian bay leaf)2
Brown sugar2 tsp
Saltto taste
Black pepper1 tsp

Method

4 steps
  1. 1Toss beef in seasoned flour; brown in oil in batches.
  2. 2Cook onion, carrot, celery and garlic until soft; stir in tomato puree.
  3. 3Pour in stout and scrape the pan. Add stock, herbs, sugar and beef.
  4. 4Cover and simmer 2 to 2 1/2 hours until beef is tender. Season.
Serve it like this

Serve in deep bowls over mash or with soda bread, scattered with parsley. A responsible pint of water on the side.
