Ingredients

3 servings
Spinach1 large bunch, chopped
Spring onion (green onion, scallion)4, sliced
Zucchini (courgette, baby marrow)1, grated
Garlic3 cloves
Green chilli2, chopped
Cumin powder (ground cumin)1 tsp
Olive oil2 tbsp
Egg6
Feta cheese½ cup, crumbled
Coriander leaves (cilantro)a handful
Lemon juice2 tsp
Saltto taste

Method

4 steps
  1. 1Soften the spring onion, garlic and chilli in the olive oil.
  2. 2Add the zucchini and cumin, then the spinach, and cook until wilted and most of the liquid has gone.
  3. 3Make wells, crack in the eggs, cover and cook on low until the whites are set.
  4. 4Scatter feta, coriander and a squeeze of lemon.
Serve it like this
