Ingredients
Buckwheat flour2 cups
Water2 cups, cold
Salt1 tsp
Butter3 tbsp, for cooking
Cooked ham4 slices
Gruyère cheese1½ cups, grated Emmental or Gruyère

Method
4 steps
1Whisk buckwheat flour, salt and half the water into a thick paste, beat for a minute, then whisk in the rest. Rest at least 1 hour, ideally overnight.
2Heat a large flat pan until hot, brush with butter and pour a ladle of batter, tilting to spread thin.
3Lower the heat. Scatter cheese in the centre, lay a slice of ham and crack an egg in the middle.
4Fold the four sides in to make a square, leaving the yolk visible. Cover for a minute until the white sets.
Serve it like this
Slide onto a large plate folded square with the yolk peeking out, a twist of pepper on top and a green salad on the side.
