Ingredients

Maida (all-purpose flour, plain flour)1 cup
Egg2
Milk1¼ cups
Butter2 tbsp, melted, plus a little for the pan
Sugar1 tbsp in the batter, more for sprinkling
Salta pinch
Lemon1, for squeezing

Method

5 steps
  1. 1Whisk flour, sugar and salt. Make a well, add eggs and a little milk and whisk to a smooth paste, then whisk in the rest of the milk and the melted butter.
  2. 2Rest the batter 30 minutes.
  3. 3Heat a non stick pan, wipe with butter. Pour a small ladle and swirl to coat thinly.
  4. 4When the edges lift and the underside is golden, flip and cook 20 seconds more.
  5. 5Sprinkle with sugar, squeeze over lemon, fold into quarters and serve warm.
Serve it like this

Fold into quarters and fan two on a warm plate, sprinkled with sugar with a lemon wedge alongside. Or roll with chocolate spread and sliced banana.
