Ingredients

4 servings
Carrot4 large, finely grated
Olive oil2 tbsp
Lemon juice1½ tbsp
Prepared mustard1 tsp
Flat leaf parsley2 tbsp, chopped
Sugara pinch
Saltto taste
Black peppera pinch

Method

3 steps
  1. 1Grate the carrots on the fine side of a box grater.
  2. 2Whisk lemon, mustard, sugar, salt and pepper, then whisk in the oil.
  3. 3Toss with the carrots and parsley and rest 10 minutes before serving.
Serve it like this

Pile into a small bowl or onto a plate as a starter, scattered with parsley. Serve chilled or at room temperature.
