Ingredients

4 servings
Carrot2 carrots, finely grated
Milk4 cups
Ghee2 tsp
Sugar3 tbsp
Cardamom¼ tsp
Saffrona few strands
Raisins2 tbsp

Method

4 steps
  1. 1Warm the ghee in a heavy pan and saute the carrot for 4 minutes.
  2. 2Pour in the milk and simmer on low, stirring often, until reduced by about a third.
  3. 3Stir in the sugar, cardamom, saffron and raisins and cook 5 more minutes.
  4. 4Serve warm, or chill for a summer dessert.
