Ingredients

4 servings
Minced mutton (goat mince, ground goat)600 g lamb or mutton mince
Onion1, grated and squeezed
Flat leaf parsley½ cup, chopped
Baharat2 tsp
Cinnamon¼ tsp
Black pepper¼ tsp
Saltto taste
Tomato2, halved, for grilling

Method

3 steps
  1. 1Mix the mince with squeezed onion, parsley, spices and salt, then knead for 2 minutes.
  2. 2Press the meat around flat skewers into long sausages, pinching ridges with your fingers. Chill 15 minutes.
  3. 3Grill with the halved tomatoes over high heat, turning, until browned outside and cooked through.
Serve it like this

Serve on warm flatbread with grilled tomato, sumac onions and tahini or hummus. Wrap and eat with hands.
