Ingredients

5 servings
Fish700 g white fish fillets
Basmati rice1¾ cups
Onion3 large, sliced
Cooking oil (vegetable oil)4 tbsp
Cumin powder (ground cumin)1½ tsp
Whole spicescinnamon, bay, allspice
Almonds¼ cup, fried
Lemon juice1½ tbsp
Saltto taste
Water3½ cups

Method

4 steps
  1. 1Fry the onions in the oil until very dark brown. Lift out half for topping.
  2. 2Add water and whole spices to the remaining onions, simmer 10 minutes and blend.
  3. 3Season the fish with cumin and salt and sear or bake until just cooked.
  4. 4Cook the rice in the onion broth until tender. Top with the fish, crispy onions and almonds.
Serve it like this

Spread the rice on a platter, top with fish, onions and almonds. Serve with tahini sauce and lemon.
