Ingredients

6 servings
Maida (all-purpose flour, plain flour)3¼ cups
Instant dry yeast2 tsp
Sugar2 tsp
Olive oil7 tbsp (dough and topping)
Za'atar½ cup
Salt1 tsp
Water1 cup warm

Method

4 steps
  1. 1Mix the flour, yeast, sugar, salt, 2 tbsp oil and water into a soft dough. Knead and let rise until doubled.
  2. 2Mix the za'atar with the rest of the oil into a loose paste.
  3. 3Divide into 6, flatten into discs, dimple all over with your fingertips and spread with za'atar paste, leaving a small rim.
  4. 4Bake at 230 C on a hot tray until the edges are golden.
Serve it like this

Fold or roll warm, serve with sliced tomato, cucumber, olives, mint and tea.
