Classic date and walnut cake.

Ingredients

Dates1½ cups pitted
Milk1 cup, hot
Maida (all-purpose flour, plain flour)¾ cup
Whole wheat flour (wholemeal atta flour, chapati flour)¾ cup
Sugar6 tbsp
Cooking oil (vegetable oil)7 tbsp
Baking soda (bicarb soda, bicarbonate of soda)1 tsp
Baking powder1 tsp
Walnuts⅔ cup, chopped
Cinnamon powder½ tsp
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp

Method

5 steps
  1. 1Soak the dates in hot milk for 30 minutes, then blend to a smooth puree with the sugar.
  2. 2Heat the oven to 170 C and line a loaf tin. Whisk the oil and vanilla into the date puree.
  3. 3Fold in both flours, the soda, baking powder and cinnamon, then most of the walnuts.
  4. 4Pour into the tin, scatter the remaining walnuts and bake 45 to 50 minutes.
  5. 5Cool fully before slicing.
Serve it like this

Serve slices slightly warm with a smear of butter or a scoop of vanilla ice cream, with filter coffee alongside.
