Ingredients

4 servings
Chicken, boneless600 g boneless thighs, bite size
Salt½ tsp
Ginger1 tsp, grated
Black peppera pinch
Cornflour (cornstarch)⅔ cup (or potato starch)
Cooking oil (vegetable oil)for frying, about 100 g absorbed
Gochujang2 tbsp
Soy sauce1½ tbsp
Honey2 tbsp (or rice syrup)
Sugar1 tbsp
Garlic4 cloves, minced
Water2 tbsp
Peanuts3 tbsp, chopped
Sesame seeds2 tsp

Method

4 steps
  1. 1Season the chicken with salt, ginger and pepper, then toss in cornflour until coated.
  2. 2Fry at 170 C for 5 minutes, rest 3 minutes, then fry again at 180 C for 2 minutes until cooked through.
  3. 3Simmer gochujang, soy, honey, sugar, garlic and water until bubbling and thick.
  4. 4Toss the chicken in the sauce off heat with peanuts and seeds.
Serve it like this
