Ingredients

Maida (all-purpose flour, plain flour)2½ cups
Berbere spice blend1 tbsp
Sugar1½ tbsp
Cooking oil (vegetable oil)3 tbsp
Salt¾ tsp
Waterabout 2/3 cup

Method

3 steps
  1. 1Mix flour, berbere, sugar, salt and oil, add water and knead into a firm dough. Rest 15 minutes.
  2. 2Roll pieces into pencil thin ropes and snip into small pea sized pieces.
  3. 3Toast in a dry heavy pan over medium low heat, stirring often, until golden and crunchy.
Serve it like this
