Ingredients

Butter250 g unsalted
Onion½ small onion, chopped
Garlic2 cloves, crushed
Ginger2.5 cm, sliced
Fenugreek seeds½ tsp
Cardamom½ tsp, or 3 pods crushed
Cumin seeds¼ tsp
Turmeric (ground turmeric)¼ tsp
Whole spices1 small cinnamon stick, 2 cloves

Method

3 steps
  1. 1Melt the butter on low in a heavy pan.
  2. 2Add all the aromatics and spices. Simmer on the lowest flame without stirring.
  3. 3Strain through a muslin cloth into a clean dry jar.
Serve it like this

Store in a glass jar; spoon into doro wat, tibs or kitfo, or drizzle warm over shiro and lentils.
