Ingredients

4 servings
Chorizo4 fresh pork chorizo sausages
Baguette (french bread roll)4 crusty rolls
Flat leaf parsleychopped
Dried oregano1 tsp
Garlic3 cloves
Dried red chillia pinch of flakes
Vinegar1 tbsp
Olive oil3 tbsp
Tomato1, diced
Onion1, diced
Capsicum (green capsicum, green bell pepper)diced
Saltto taste

Method

4 steps
  1. 1Mix parsley, oregano, garlic, chilli, vinegar, olive oil and salt for chimichurri.
  2. 2Grill chorizos over medium heat, turning, until cooked through. Butterfly them for the last minutes.
  3. 3Toast rolls on the grill.
  4. 4Fill rolls with chorizo, chimichurri and salsa criolla of tomato, onion and capsicum.
Serve it like this

Wrap in a napkin and serve straight from the grill with extra chimichurri in a jar on the table.
