Chole kulcha flatbread with ricotta

Chickpeas, boiled2½ cups, boiled
Onion1 large, finely chopped
Tomato2, chopped
Ginger1 tbsp, chopped
Green chilli2, chopped
Chole masala1 tbsp
Dry mango powder½ tsp
Cooking oil (vegetable oil)4 tsp
Ricotta⅔ cup
Mozzarella⅔ cup, grated
Butter4 tsp
Garlic2 cloves, grated
Rocket leaves (arugula)2 handfuls
Lemon juice1 tbsp
Olive oil2 tsp
Kashmiri chilli powder¼ tsp
Coriander leaves (cilantro)a handful

- 1Heat the oil in a pan on medium heat. Cook the onion for 5 minutes, then the ginger and chilli for 1 minute and the tomato for 5 minutes.
- 2Add the chole masala, amchur, chickpeas, salt and 1/4 cup water. Cook 8 minutes on medium heat, mashing a few chickpeas, until thick and dry.
- 3Beat the ricotta with half the lemon and a pinch of salt. Melt the butter with the garlic and brush over the kulchas.
- 4Top each kulcha with chole and mozzarella, then dollops of ricotta. Bake on a tray at 220°C for 8 minutes.
- 5Toss the rocket with the olive oil, the rest of the lemon and a pinch of salt. Pile on top and finish with kashmiri chilli and coriander.
Serve it like thisCut each flatbread into four on a wooden board, rocket heaped in the centre. Dust with chilli and serve with a small bowl of pickled onions.
