Ingredients

4 servings
Curd (plain yogurt, natural yoghurt)1¼ cups
Water3 cups, chilled
Ginger1.5 cm
Green chilli1
Coriander leaves (cilantro)a handful
Mint leavesa few leaves
Cumin seeds1 tsp, roasted and crushed
Black salt½ tsp
Salt½ tsp

Method

4 steps
  1. 1Dry roast the cumin seeds for a minute and crush them.
  2. 2Blend the ginger, green chilli, coriander and mint with a splash of water to a paste.
  3. 3Add the curd, cold water, both salts and most of the cumin. Blend for 30 seconds or churn with a wooden mathani.
  4. 4Pour into glasses and finish with a pinch of roasted cumin.
Serve it like this

Pour into glasses just before serving, nicely chilled or piping hot, whichever it's meant to be.
