Chicken, boneless400 g boneless, cubed
Hung curd (greek yogurt)⅓ cup
Ginger garlic paste1 tbsp
Kashmiri chilli powder1¼ tsp
Garam masala½ tsp
Cumin powder (ground cumin)½ tsp
Lemon juice1½ tbsp
Cooking oil (vegetable oil)1 tbsp

Brown rice⅔ cup, cooked
Cucumber1, diced
Tomato1, diced
Onion1 small, sliced
Lettuce2 cups, shredded
Sweet corn kernels (corn kernels)⅓ cup
Curd (plain yogurt, natural yoghurt)⅓ cup, for dressing
Mint leavesa handful
Coriander leaves (cilantro)a handful

- 1Marinate chicken in hung curd, ginger garlic paste, spices, half the lemon and salt for at least 30 minutes.
- 2Cook brown rice until tender and let it cool slightly.
- 3Grill, air fry or pan sear the chicken on high with oil, 10 to 12 minutes, until charred and cooked through with no pink.
- 4Blend curd, mint, coriander, chaat masala and salt into a dressing.
- 5Build bowls: rice, lettuce, cucumber, tomato, onion, corn, chicken. Drizzle dressing and remaining lemon.
Serve it like thisToss just before serving and bring it to the table cold, so it stays crisp.
