Ingredients

Pani puri shells (golgappe)30 golgappa puris
Papdi (flat fried crisps)30 papdis
Sev1 cup
Boondi½ cup
Chickpeas, boiled2 cups, boiled
Potato3, boiled and cubed
Moong sprouts (mung bean sprouts)1½ cups
Onion1, finely chopped
Tomato1, finely chopped
Cucumber1, diced
Pomegranate seeds½ cup arils
Curd (plain yogurt, natural yoghurt)1¼ cups, whisked with a little sugar
Sugar2 tsp, for the curd
Mint leavesa big handful
Coriander leaves (cilantro)a big handful
Green chilli2
Tamarindlemon sized ball
Jaggery⅓ cup
Chaat masala2 tsp
Cumin powder (ground cumin)1 tsp, roasted
Red chilli powder (indian red chili powder)1 tsp
Black salt½ tsp
Peanuts⅓ cup, roasted
Saltto taste

Method

5 steps
  1. 1Simmer tamarind and jaggery with a cup of water, strain and cook to a thick chutney with cumin and chilli.
  2. 2Blend mint, coriander, green chilli, a little chaat masala and salt with a splash of water.
  3. 3Toss chickpeas and potatoes with chaat masala, cumin and black salt.
  4. 4Arrange puris, papdi, sev, boondi, chickpeas, potatoes, sprouts, vegetables and peanuts in clusters on a big board.
  5. 5Set curd and both chutneys in bowls in the middle and pomegranate on top. Let guests build their own.
Serve it like this

Use a large board or thali: puris and papdi stacked, toppings in clusters, three chutney bowls in the centre. Serve cold chutneys with room temperature fillings.
