Ingredients

6 servings
Raw mango (green mango)2 medium
Sugar6 tbsp
Cumin seeds1 tsp, roasted and crushed
Black salt¾ tsp
Salta pinch or two
Black pepper¼ tsp
Mint leavesa handful
Waterabout 5 cups, chilled

Method

  1. 1Pressure cook the whole mangoes with 1 cup water for 2 to 3 whistles and let the pressure release naturally. Or boil them for 15 to 20 minutes.
  2. 2Cool, peel and squeeze out all the pulp. Scrape the seed well.
  3. 3Blend the pulp with sugar, roasted cumin, black salt, salt, pepper and mint into a smooth concentrate.
  4. 4For each glass, stir 3 to 4 tbsp concentrate into chilled water. Taste and adjust.
  5. 5Store the rest of the concentrate in a clean jar in the fridge for 3 to 4 days.
Serve it like this

Pour into glasses just before serving, nicely chilled or piping hot, whichever it's meant to be.
