Ingredients

4 servings
Cooking oil (vegetable oil)2 tbsp
Chorizo2 links, sliced, or pork sausage
Onion1 medium, chopped
Spring onion (green onion, scallion)3 stalks, chopped
Garlic2 cloves, minced
Tomato2, chopped
Cumin powder (ground cumin)½ tsp
Saltto taste
Rajma, dry (dried red kidney beans)1½ cups cooked rajma (from 1/2 cup dry), with a little liquid
Cooked rice3 cups, leftover
Egg4
Avocado1, sliced

Method

5 steps
  1. 1Heat 1 tbsp oil in a wide pan on medium. Fry the chorizo 4 to 5 minutes until browned and cooked through. Lift out, leaving the oil.
  2. 2In the same pan cook the onion, spring onion and garlic 4 minutes, then the tomato, cumin and salt for 5 minutes to make hogao.
  3. 3Add the beans with a little of their liquid and mash a few. Add the rice and fry, stirring and pressing, 5 to 6 minutes until hot right through and a little crisp in places.
  4. 4Fry the eggs in the remaining oil in another pan, keeping the yolks runny if you like.
  5. 5Divide the calentado onto plates, top with chorizo, a fried egg and sliced avocado.
Serve it like this

Mound the calentado on a plate, lay chorizo slices alongside, crown with a fried egg and fan avocado slices next to it.
