Classic boerewors.

Ingredients

6 servings
Minced beef (beef mince, beef or buff keema)700 g beef mince, coarse
Minced pork (pork mince, ground pork)300 g pork mince, with fat
Coriander seeds2 tbsp, toasted and coarsely ground
Black pepper1½ tsp
Nutmeg¼ tsp
Whole spicesa pinch ground cloves
Allspicea pinch
Vinegar2 tbsp
Salt2½ tsp

Method

4 steps
  1. 1Toast the coriander seeds until fragrant, then grind coarsely with the pepper.
  2. 2Mix the mince with spices, vinegar and salt gently until just combined. Chill 1 hour.
  3. 3Stuff into soaked natural casings in one long coil, or shape into a flat coil by hand.
  4. 4Grill over medium coals, turning once, until cooked through and juices run clear.
Serve it like this

Lay the whole coil on a board, cut into lengths and serve with pap, chakalaka or in rolls with tomato relish.
