Ingredients

10 servings
Chocolate sponge cakeone 8 inch chocolate sponge, split in 3 layers
Fresh cream (thickened cream, heavy cream)1⅔ cups, chilled
Sugar½ cup, divided
Cherries1½ cups pitted, from a tin
Water½ cup
Dark chocolate (bittersweet chocolate)80 g, shaved
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp
Glace cherries (candied cherries)10, for the top

Method

5 steps
  1. 1Make a soaking syrup: simmer the water with 50 g sugar and a few spoons of the cherry tin juice for 3 minutes. Cool.
  2. 2Whip the chilled cream with the remaining sugar and vanilla to firm peaks.
  3. 3Place one sponge layer on a board, brush with syrup, spread cream and scatter half the cherries. Repeat with the second layer.
  4. 4Top with the last layer, soak it, then cover the top and sides with cream.
  5. 5Press shaved chocolate onto the sides and top, pipe rosettes and crown each with a cherry. Chill at least 2 hours.
Serve it like this

Cut chilled wedges with a hot knife and serve straight from the fridge on dessert plates, a cherry on each slice.
