Classic biff à la Lindström.

Ingredients

4 servings
Minced beef (beef mince, beef or buff keema)500 g
Beetroot (beet)pickled beetroot, finely diced
Capers2 tbsp, chopped
Onion½, finely chopped
Egg yolk2 yolks
Fresh cream (thickened cream, heavy cream)¼ cup
Salt1 tsp
White pepper¼ tsp
Butter2 tbsp
Potatoboiled potatoes, to serve

Method

5 steps
  1. 1Mix the beef with the yolks and cream, then fold in beetroot, capers, onion, salt and pepper.
  2. 2Shape 8 flat patties about 2 cm thick.
  3. 3Fry in butter over medium high heat, 3 to 4 minutes per side.
  4. 4Splash a little beetroot liquid and water into the pan, scrape and spoon over the patties.
  5. 5Serve with boiled potatoes and a fried egg if you like.
Serve it like this

Lay two patties over boiled potatoes, spoon the pan juices on top and add extra beetroot and capers. A fried egg on top is welcome.
