Herring fillets400 g salted herring fillets, soaked, or matjes fillets
Vinegar⅔ cup white vinegar
Sugar¾ cup
Water¾ cup + 2 tbsp
Onion1 red onion, thinly sliced
Carrot1 small, thinly sliced
Allspice10 berries
Bay leaf (indian bay leaf)2
Black pepper1 tsp whole

- 1If using salted herring, soak the fillets in cold water for 12 hours, changing the water twice.
- 2Boil the vinegar, sugar, water, allspice, bay and peppercorns until the sugar dissolves. Cool completely.
- 3Cut the herring into 2 cm pieces and layer in a clean jar with onion, carrot and dill.
- 4Pour over the cold brine, close and refrigerate at least 24 hours, up to a week.
- 5Serve cold with boiled new potatoes, sour cream and chives.
Serve it like thisLift the herring from the brine onto a small chilled dish with its onion rings and fresh dill. Serve with boiled new potatoes and crispbread.
