Classic bara brith.

Ingredients

10 servings
Tea leaves (black tea leaves)for 300 ml strong hot tea
Water1¼ cups, for the tea
Raisinsmixed dried fruit
Brown sugar¾ cup
Maida (all-purpose flour, plain flour)2½ cups
Baking powder1 tbsp
Egg1
Allspice1 tsp mixed spice
Butterto serve

Method

4 steps
  1. 1Soak the fruit and sugar in strong hot tea overnight.
  2. 2Beat in the egg, then stir in the flour, baking powder and spice.
  3. 3Pour into a lined loaf tin and bake at 160°C for 60 to 75 minutes.
  4. 4Cool completely, then slice and spread with butter.
Serve it like this

Slice thickly, spread with salted butter and serve with tea.
