Ingredients

Rolled oats (porridge oats)1 cup
Whole wheat flour (wholemeal atta flour, chapati flour)1¼ cups
Banana3 very ripe
Egg2
Curd (plain yogurt, natural yoghurt)½ cup
Brown sugar⅓ cup
Cooking oil (vegetable oil)¼ cup
Baking powder1½ tsp
Baking soda (bicarb soda, bicarbonate of soda)½ tsp
Cinnamon powder1 tsp
Walnuts½ cup, chopped
Salta pinch

Method

4 steps
  1. 1Heat oven to 190 C and line a 12 hole muffin tin.
  2. 2Mash the bananas, then whisk in eggs, curd, sugar and oil.
  3. 3Fold in oats, flour, raising agents, cinnamon, salt and walnuts until just combined.
  4. 4Divide into cases and bake 20 to 22 minutes until a skewer comes out clean.
Serve it like this

Serve warm with a pat of butter or a cup of curd. Pack two in a tiffin with fruit.
