Ingredients

8 servings
Maida (all-purpose flour, plain flour)2 cups
Sugar1 tbsp, plus more to sprinkle
Salt¼ tsp
Butter⅔ cup, cold
Water¼ cup, ice cold
Apple3 medium, finely diced
Brown sugar¼ cup plus 1 tbsp
Cinnamon powder1 tsp
Lemon juice2 tsp
Cornflour (cornstarch)1 tbsp, mixed with 1 tbsp water
Egg1, beaten

Method

6 steps
  1. 1Rub the butter into the maida, 1 tbsp sugar and salt until pea sized, add ice water and press into a disc. Chill.
  2. 2Cook the apples, brown sugar, cinnamon and lemon in a pan until just tender. Stir in the cornflour slurry and cook a minute until thick. Cool completely.
  3. 3Heat the oven to 200 C. Roll the pastry 3 mm thick and cut 16 rectangles.
  4. 4Spoon filling onto 8 of them, brush the edges with egg, top with the rest and crimp with a fork. Cut two small vents.
  5. 5Chill 10 minutes, brush with egg and sprinkle with sugar.
  6. 6Bake until deep golden, then cool 15 minutes before eating; the filling is very hot.
