Ingredients

Cornflour (cornstarch)1⅔ cups
Maida (all-purpose flour, plain flour)1¼ cups
Baking powder1 tsp
Butter⅔ cup, soft
Sugar½ cup
Egg3 yolks
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp
Lemonzest of 1
Condensed milk (sweetened condensed milk)1 tin, cooked into dulce de leche
Desiccated coconut (unsweetened shredded coconut)⅓ cup

Method

5 steps
  1. 1Simmer the sealed condensed milk tin fully covered in water for 2 1/2 hours to make dulce de leche. Cool completely before opening.
  2. 2Cream butter and sugar, beat in yolks, vanilla and zest. Fold in cornflour, maida and baking powder.
  3. 3Chill 30 minutes, roll 5 mm thick and cut 5 cm rounds.
  4. 4Bake at 170°C for 10 to 12 minutes. They should stay pale.
  5. 5Sandwich pairs with dulce de leche and roll the edges in coconut.
Serve it like this
