Ingredients

8 servings
White bread8 slices, crusts off
Sugar1 cup, divided
Water1 cup, hot
Lemon juice1 tsp
Rose water2 tsp
Orange blossom water (orange flower water)2 tsp
Milk2 cups
Fresh cream (thickened cream, heavy cream)⅔ cup
Cornflour (cornstarch)⅓ cup
Pistachios¼ cup, ground

Method

5 steps
  1. 1Toast the bread in a 150 C oven until dry and golden, then lay it snugly in an 8 inch dish.
  2. 2Melt 3/4 cup sugar in a heavy pan until deep amber. Stand back and pour in the hot water; it will splutter. Stir until smooth, add the lemon, rose and orange blossom waters and simmer 3 minutes.
  3. 3Pour the hot caramel over the bread and press down with a spoon. Cool.
  4. 4Whisk the milk, cream, cornflour and remaining sugar cold, then cook, stirring, until thick and bubbling.
  5. 5Spread the cream over the bread, chill until set, then cover with ground pistachios.
Serve it like this

Cut into squares and lift out with a flat spatula so the layers show, pistachio side up.
