Ingredients

Pumpkin1 cup, cubed
Brinjal (eggplant, aubergine)2 small
Green beans10
Bamboo shoot½ cup, boiled
Drumstick (moringa pods)1, in fingers
Rice flour3 tbsp, as paste
Tamarinda small ball
Green chilli3
Garlic5 cloves
Ginger1.5 cm
Turmeric (ground turmeric)¼ tsp
Mustard oil1 tbsp
Water3¼ cups
Saltto taste

Method

4 steps
  1. 1Boil vegetables and bamboo shoot in water with salt and turmeric.
  2. 2Pound garlic, ginger and chillies; add with tamarind water.
  3. 3Stir in rice flour paste and simmer until slightly thick.
  4. 4Finish with a drizzle of smoked mustard oil.
Serve it like this
