Chicken, boneless500 g boneless thigh, bite sized
Soy sauce1 tbsp plus 1 tsp
Garlic5 cloves, grated
Ginger1 tsp, grated
Chinese five spice powder½ tsp
White pepper½ tsp
Sugar1 tsp
Egg1
Tapioca starch½ cup coarse sweet potato starch or tapioca starch
Cooking oil (vegetable oil)for frying (about 4 tbsp absorbed)
Basil leavesa big handful of Thai basil leaves
Salt½ tsp, toasted with a pinch of pepperMethod
- 1Marinate chicken with soy, garlic, ginger, five spice, half the pepper, sugar and egg for 30 minutes.
- 2Toss in the starch, pressing so lumps stick, and rest 5 minutes.
- 3Fry at about 170°C until pale gold, lift out, then fry again at 190°C until deep golden. Check no pink remains.
- 4Fry the basil leaves in the hot oil for a few seconds, standing back.
- 5Toss chicken and basil with the toasted pepper salt and serve.
