Ingredients

5 servings
Pork belly400 g, skin on, in small dice
Cooking oil (vegetable oil)1 tbsp
Shallots8, sliced and fried crisp
Garlic5 cloves, minced
Sugar1½ tbsp
Soy sauce2½ tbsp
Dark soy sauce1 tbsp
Chinese five spice powder½ tsp
Star anise1 pod
White pepper¼ tsp
Water1⅔ cups
Egg5, hard boiled and peeled
Rice1½ cups raw, cooked
Bok choy (pak choi)blanched greens to serve

Method

5 steps
  1. 1Fry the shallots in oil until golden and crisp. Lift out.
  2. 2Fry the pork in the shallot oil until the fat renders and edges brown.
  3. 3Add garlic and sugar and stir until the sugar melts and caramelises.
  4. 4Add soys, five spice, star anise, pepper, water, the eggs and half the shallots. Simmer covered on low for an hour.
  5. 5Stir in the rest of the shallots. Spoon pork and sauce over rice with a halved egg and greens.
Serve it like this

Spoon pork and sauce over a small bowl of rice, add half a braised egg and a few greens, and serve with pickled radish or cucumber.
