Ingredients

2 servings
Sabudana (tapioca pearls)½ cup large tapioca pearls (or big sabudana)
Jaggery¼ cup dark brown sugar or jaggery
Water300 ml for tea, 50 ml for syrup
Tea leaves (black tea leaves)2 tbsp strong black tea (Assam is perfect)
Milk1¼ cups, chilled

Method

4 steps
  1. 1Boil the pearls in plenty of water, stirring, until they float, then simmer covered until chewy all the way through. Rest 10 minutes off the heat.
  2. 2Melt the jaggery with 50 ml water into a thick syrup and stir in the drained pearls.
  3. 3Brew the tea strong in 300 ml water for 5 minutes and cool.
  4. 4Spoon pearls and syrup into tall glasses, smearing syrup up the sides. Add ice, tea and milk.
Serve it like this

Serve in tall clear glasses with the syrup stripes showing, plenty of ice and wide straws for the pearls.
