Ingredients

3 servings
Chicken, boneless500 g boneless thigh, 3 cm pieces
Spring onion (green onion, scallion)the thick white parts of a bunch, in 3 cm lengths
Soy sauce3 tbsp plus 1 tsp
Mirin3 tbsp plus 1 tsp (or honey and water)
Sugar1½ tbsp
Water2 tbsp
Salta pinch
Cooking oil (vegetable oil)1 tsp

Method

5 steps
  1. 1Soak bamboo skewers in water for 30 minutes.
  2. 2Simmer soy, mirin, sugar and water until reduced by a third.
  3. 3Thread chicken and spring onion alternately onto the skewers. Brush with oil and season lightly with salt.
  4. 4Grill on high heat or a hot griddle, turning, until charred in spots and cooked through with no pink.
  5. 5Brush with tare two or three times in the last minutes, grilling between coats.
Serve it like this

Line the skewers on a long plate with lemon wedges and a little shichimi or chilli powder, cold drinks alongside.
