Ingredients

Matcha powder1½ tsp
Water3 tbsp, hot but not boiling
Milk¾ cup plus 1 tbsp
Sugar2 tsp, or honey

Method

4 steps
  1. 1Sift the matcha into a bowl.
  2. 2Add the hot water (about 80°C) and whisk in a quick zigzag until frothy.
  3. 3Heat and froth the milk with the sugar.
  4. 4Pour the milk into a cup and spoon the matcha over, or pour the matcha into the milk.
Serve it like this

Serve in a wide cup so the green foam shows, or over ice in a tall glass in summer, with a small biscuit on the side.
