Ingredients

Chicken, curry cut (bone in chicken, small pieces)1 kg, bone in
Water2 litres
Onion1
Capsicum (green capsicum, green bell pepper)½
Carrot1
Spring onion (green onion, scallion)3
Maize flour (fine yellow cornmeal)1⅔ cups cornmeal
Queso fresco1 cup, grated
Butter2 tbsp
Egg1
Flat leaf parsleya handful
Saltto taste

Method

4 steps
  1. 1Simmer the chicken with the onion, capsicum, carrot, spring onion and salt for 40 minutes.
  2. 2Mix the cornmeal, cheese, butter, egg and a ladle of hot broth into a dough.
  3. 3Roll into marble sized balls.
  4. 4Shred the chicken back into the pot and simmer the balls in the soup 15 minutes. Add parsley.
Serve it like this

Serve in deep bowls with plenty of balls and chicken, sprinkled with parsley.
