Classic vattayappam.

Ingredients

8 servings
Rice1 cup, soaked 4 hours
Fresh grated coconut1 cup
Cooked rice2 tbsp
Sugar⅔ cup
Instant dry yeast1 tsp
Waterfor grinding
Cardamom½ tsp
Cashews1½ tbsp
Raisins1½ tbsp
Salta pinch

Method

4 steps
  1. 1Grind soaked rice, coconut and cooked rice with water into a smooth, thick batter.
  2. 2Mix in sugar, yeast, salt and cardamom. Ferment 6 hours.
  3. 3Pour into a greased plate, top with cashews and raisins and steam 25 to 30 minutes.
  4. 4Cool 10 minutes and cut into wedges.
Serve it like this

Cut into wedges and serve with tea, or with mutton stew on Easter morning.
