Method
7 steps
1Whisk the maida, 1 egg, 1 cup milk, the water and a pinch of salt into a thin, smooth batter. Rest for 15 minutes.
2Cook the chicken with a little salt, turmeric and water until no pink remains, then shred it. Heat the oil, fry the onion until soft and light golden, add the chilli and ginger garlic paste, then the chilli powder, garam masala and pepper. Add the chicken, salt, coriander and mint and cook until dry.
3Make 8 or 9 thin crepes on a nonstick pan without browning them.
4Beat the remaining 4 eggs with the remaining milk and a pinch of salt and pepper.
5Grease a heavy pan with ghee. Dip a crepe in the egg mix and lay it in, spread some filling, then cover with another dipped crepe. Repeat, ending with a crepe, and pour any leftover egg mix over the top.
6Cover and cook on very low heat for 15 minutes. Flip carefully onto a plate, slide back in and cook 10 minutes more.
7Rest for 5 minutes, then cut into wedges.
Serve it like this
Cut into wedges like a cake and serve warm on a plate, with a cup of sulaimani or tea.
