Ingredients

Puff pastry2 sheets
Milk3 cups
Custard powder⅔ cup
Cornflour (cornstarch)⅓ cup
Sugar½ cup for custard, 2 cups icing sugar
Butter3 tbsp
Egg yolk3 yolks
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp
Passion fruitpulp of 2, for icing
Water1 tbsp

Method

5 steps
  1. 1Bake the pastry sheets at 200°C between two trays for 15 minutes until golden and flat. Cool.
  2. 2Fit one sheet in a lined 23 cm square tin.
  3. 3Whisk custard powder, cornflour, 1/2 cup sugar, yolks and a little milk to a paste, then the rest of the milk. Cook, whisking, until very thick and bubbling. Add butter and vanilla.
  4. 4Pour over the base, top with the second sheet and press gently. Chill 4 hours.
  5. 5Mix icing sugar, passionfruit pulp and water, spread on top, set, then slice with a serrated knife.
Serve it like this

Cut into squares with a serrated knife and serve chilled on plates with forks, or in paper like a bakery.
