Ingredients

Beef800 g flank steak
Waterto cover
Bay leaf (indian bay leaf)2
Onion3, two thinly sliced
Garlic6 cloves, crushed
Lemon juice4 tbsp lime juice
Orange juice4 tbsp
Olive oil3 tbsp
Saltto taste

Method

4 steps
  1. 1Simmer the beef with bay, 1 onion and salt for 1 1/2 hours until tender.
  2. 2Cool and shred into strands. Toss with garlic, lime, orange and salt and rest 30 minutes.
  3. 3Fry in hot olive oil in batches, pressing flat, until crisp underneath. Turn and crisp again.
  4. 4Add the sliced onions and fry until soft with brown edges.
Serve it like this

Pile the crisp beef and onions on a plate with lime wedges, white rice, black beans and maduros.
