Classic Ulster fry.

Ingredients

2 servings
Sausages (snags, bangers)2 pork sausages
Bacon (streaky rashers, streaky bacon)4 rashers back bacon
Black pudding2 slices
Egg2
Tomato1 large, halved
Button mushrooma handful
Potato1, boiled and mashed
Maida (all-purpose flour, plain flour)3 tbsp
Whole wheat bread (wholemeal bread)2 soda farls or thick slices of soda bread
Cooking oil (vegetable oil)for frying
Butterfor the potato bread

Method

5 steps
  1. 1Potato bread: mix the mash with butter and salt, knead in the flour, roll 1 cm thick, cut into quarters and dry fry 3 to 4 minutes per side.
  2. 2Fry the sausages slowly in a little oil, turning.
  3. 3Add the bacon and black pudding, then the tomatoes and mushrooms.
  4. 4Fry the soda farls and potato bread in the pan drippings until golden.
  5. 5Fry the eggs last and serve everything hot.
Serve it like this

Pile everything on a warm plate with the eggs on top. Serve with strong tea.
