Gruyère cheese2 slabs kefalograviera or gruyère, 1.5 cm thick
Maida (all-purpose flour, plain flour)2 tbsp
Olive oil2 tbsp
Lemon1, in wedges
Black peppera pinch
Dried oreganoa pinch

Method

3 steps
  1. 1Rinse the cheese slabs in cold water and dredge in flour.
  2. 2Heat oil until shimmering and fry the cheese 2 minutes a side.
  3. 3Squeeze lemon over, add pepper and oregano and serve straight from the pan.
Serve it like this
