Ingredients

4 servings
Fermented soybean1 cup tungrymbai
Sesame seeds¼ cup black sesame
Onion1 large, chopped
Ginger4 cm, ground
Garlic5 cloves, ground
Green chilli3, slit
Turmeric (ground turmeric)½ tsp
Cooking oil (vegetable oil)1½ tbsp
Saltto taste
Water1 cup

Method

4 steps
  1. 1Dry roast the black sesame until it pops and grind to a paste.
  2. 2Heat oil, fry onion, ginger, garlic and chillies until soft and golden.
  3. 3Add the fermented soybeans and turmeric and fry for 5 minutes.
  4. 4Add the sesame paste, water and salt and simmer until thick.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
