Ingredients

4 servings
Chicken mince (ground chicken)500 g, preferably thigh
Spring onion (green onion, scallion)3, finely chopped
Ginger2 tsp, grated
Egg½, beaten
Cornflour (cornstarch)1 tbsp
Soy sauce3 tbsp
Mirin3 tbsp
Sake1 tbsp
Sugar1 tbsp
Egg yolk3 yolks, very fresh (optional)
Cooking oil (vegetable oil)for the grill
Salta pinch

Method

5 steps
  1. 1Simmer soy, mirin, sake and sugar until syrupy to make the tare.
  2. 2Knead chicken with spring onion, ginger, egg, cornflour and salt until sticky.
  3. 3Shape into oval patties around soaked skewers and chill 15 minutes.
  4. 4Grill on a hot oiled grill, turning, until cooked through.
  5. 5Brush with tare and grill again, twice, until glossy.
Serve it like this

Lay skewers on a long plate with a small dish of egg yolk for dipping and a sprinkle of shichimi.
